Gluten-Free Spiced Banana Bread
  1. 3 ripe bananas
  2. 2 eggs, preferably pasture-raised
  3. 2 cups almond flour
  4. 1 teaspoon baking powder
  5. 1 tablespoon coconut oil
  6. 2 teaspoons cinnamon
  7. 2 tablespoons maple syrup or sun-choke syrup
  8. 1/2 teaspoon of sea, celtic, or pink salt
  9. 1/4 teaspoon allspice
  1. Preheat the oven to 350 degrees Fahrenheit and grease a small loaf pan.
  2. Mash the bananas until they reach a liquid consistency. Then, incorporate the eggs, coconut oil, maple syrup, and stir.
  3. Sift in the almond meal into the mixture as well as the other dry ingredients. Mix well.
  4. Pour the batter into your well-greased loaf pan and bake for 55 minutes, checking the loaf around the 40 minute mark.
  5. Remove from the oven once the loaf is ready and let it cool for an hour. Serve and enjoy!

Is it really 1 tablespoon of baking powder? I’ve never used that much in a recipe before.

Oh ha ha. I went ahead and made it as written in the end. It was quite good but it made my tongue feel a bit funny from the baking powder. Glad I checked. I will try it again.
I actually got this recipe through sheer luxe website so maybe they need the updated version too.
        Thanks x
