Gluten-Free Spiced Banana Bread

Ingredients
- 3 ripe bananas
- 2 eggs, preferably pasture-raised
- 2 cups almond flour
- 1 teaspoon baking powder
- 1 tablespoon coconut oil
- 2 teaspoons cinnamon
- 2 tablespoons maple syrup or sun-choke syrup
- 1/2 teaspoon of sea, celtic, or pink salt
- 1/4 teaspoon allspice
Instructions
- Preheat the oven to 350 degrees Fahrenheit and grease a small loaf pan.
- Mash the bananas until they reach a liquid consistency. Then, incorporate the eggs, coconut oil, maple syrup, and stir.
- Sift in the almond meal into the mixture as well as the other dry ingredients. Mix well.
- Pour the batter into your well-greased loaf pan and bake for 55 minutes, checking the loaf around the 40 minute mark.
- Remove from the oven once the loaf is ready and let it cool for an hour. Serve and enjoy!

Is it really 1 tablespoon of baking powder? I’ve never used that much in a recipe before.

Oh ha ha. I went ahead and made it as written in the end. It was quite good but it made my tongue feel a bit funny from the baking powder. Glad I checked. I will try it again.
I actually got this recipe through sheer luxe website so maybe they need the updated version too.
